This coffee is a bouquet in a cup. It comes from a wet mill in Chelbesa, a town within Gedeb (which, for those who enjoy Russian doll descriptions, is an area within Yirgacheffe). It's a Grade 1 coffee composed of heirloom cultivars, the types of shrubs that once grew wild in Ethiopia's coffee forests. Like most of the origin's better brews, this one comes from loads of small outgrowers, farmers who grow a smattering of trees on their property and submit their harvests to local mills. The processing entailed washing in ceramic tanks, followed by a period of sun drying on raised beds.
Yirgacheffe's flavor reputation involves clean floral notes, and this cup delivers them in spades. There's enough jasmine to stack against a pearl tea, and the note blooms lavishly on the cool. Peach makes an appearance. The way it pairs with the jasmine is worthy of a chef's kiss. Citrus comes next, another hallmark of the Yirgacheffe profile, but lest you think this coffee lacks sweetness, the cup delivers raw sugar. The sum of these parts—the jasmine, the peach, the citrus, the sugar—is a quintessentially Yirgacheffe coffee. It's clean, sweet, and inimitably floral.
