Finca Santa Teresa, often abbreviated FST, is one of Panama's most decorated estates. It's a perennial finalist in the Best of Panama competition, with crops that have placed in the top ten almost every year since 2006. Coffees from FST have drawn attention from three-star Michelin outfits like The Fat Duck, which regularly features them on its menu. Put bluntly, Finca Santa Teresa is as good as Panama gets (and considering that Panama is as good as specialty coffee gets, that's no small statement).

This Finca Santa Teresa Lot 16 Honey Process occupies a goldilocks space between the clarity of a washed coffee and the saturated fruits of a dry process (natural). It's a distinguished brew deserving of a string section as it cools. There's stone fruit to be had. A pot of apricot and nectarine melding to a starchy paste. The middle generates a sweet, creamy body, and the finish pivots to a pairing of honey, toasted rice and lemongrass. It's a unique coffee and a fitting ambassador for one of the preeminent estates in the specialty coffee world.
