Colombia Huila Pink Bourbon
Lemonade, Marzipan, Clean and Bold, Acidic and Sweet
Somewhere between the sparkling fruits of Red Bourbon and the buttery sweetness of Yellow lies a rare varietal that's gained a cult followed in the coffee world: Pink Bourbon. Hailing from Colombia, this hybrid cultivar delivers syrupy sugars and tart citrus in equal measure. We've been on the hunt for it for some time, and we're thrilled to have snagged some.
This spectacular Pink Bourbon comes from Finca Las Flores in Huila. Las Flores is a familiar name in the specialty community. It boasts Cup of Excellence bonafides and a reputation for extraordinary production practices -- and this coffee makes plain why.
The cup opens with bracing lemon and a healthy dose of cane sugar. What do you get when you cross lemon and sugar? Lemonade. That Country Time note is a Pink Bourbon signature, and it's downright mountainous here. On the cool, the sweetness gives to a flash of marzipan crossed with a hint of pastry dough. There's a savory streak in the dough, which spins the cup into paradoxical territory. It manages to be several things at once: tart and sweet, clean and savory, bold and refined. It's a tight-rope-walk coffee that resists classification and earns every inch of its hype. Works best as pour over or single origin espresso.
