Peach Acidity, Pear Sweetness, Florals

This coffee comes from Claudia Munoz, a trailblazing female producer in Colombia's El Bombo region. She runs her small farm with a focus on high-scoring microlots. This one is predominantly Caturra, a natural mutation of the Bourbon varietal, and it bears the varietal's signature qualities: crisp, sweet, dense with flavor. It's a washed coffee, but owing to its prolonged fermentation, it lands with String Theory complexity. The long and short—it's really good.

Peach opens the cup, but don't expect it to drink like nectar; it's more peach acidity than flavor. You know that slightly tart sweetness you get when you bite in a peach? That's the vibe. It matches with pear sugars and blooms wonderfully on the cool. There are florals hanging out on the finish and a hint of lychee. But this coffee is more about feel than individual notes.
