Yellow Fruits, Crisp Pear, Speculoos

Today's coffee comes from one of the more decorated outfits in Ka'u, a family-owned operation called Miranda Farms. The farm has taken first place in Hawaii's statewide cupping competition multiple times. They've got trees ranging from Red Catuai to Typica to a small batch of young Geishas, all of which are sensational, but their Yellow Caturra stands out for its cleanliness and razor sharp flavors. 

This is a sophisticated cup. It swaps wild ferment and peacock fruit for an attribute that anaerobic hounds too often overlook—cleanliness. This is where the washed category shines, and it's why loads of coffee professionals will, behind closed doors, confess to only drinking washed lots. The acidity in this coffee is fairly remarkable for the way it balances presence and restraint. It's the variety you'll find in all manner of yellow fruits, and lines up against a hint of crisp pear. There's also a fantastic multi-sensory experience that happens on the cool. A speculoos note comes out—Trader Joe's favorite—along with the faintest hit of tannins. Put it all together, and you've got a standout coffee that does justice to an origin that's too often misrepresented and misunderstood.
