Fruit Punch, Beer-like Fermentation, Watermelon, Jasmine

This bold limited release comes from Panama's famed Elida Estate. Their crops regularly top annual lists, and they've gathered a devoted following. As coffee farms go, Elida occupies a polished space, but hype carries risk. These days, Elida is on the hook to match some lofty expectations. And that's the most impressive thing about them - they don't merely match expectations, they roar past them.

This small-production offering draws its flavor as much from its processing as from the coffee itself. Elida's Anaerobic Slow Dry Method involves placing coffee cherries in an oxygen suppressed environment to drive fermentation, then slowly drying the coffee over a period of thirty days. It's a meticulous, demanding process, and the rewards are evident in the cup.

Fruit punch: that's the first thing you get. It headlines the aroma and transitions dominantly into the cup. Next comes some potent beer-like fermentation, a boozy nod to the meticulous slow anaerobic processing. Watermelon follows, sweet and thick, before the cup pivots to a hint of jasmine on the finish. It's a heavy ride redolent of a Lambic beer, and it cools to kaleidoscopic effect. If you haven't tried Elida, this is your shot. Grab a bag and embrace the hype. You won't be disappointed.
