Finca Santa Teresa, often abbreviated FST, is one of Panama's most decorated estates. It's a perennial finalist in the Best of Panama competition, with crops that have placed in the top ten almost every year since 2006. Coffees from FST have drawn the attention of three-star Michelin outfits like The Fat Duck, which regularly features them on its menu. Put bluntly, Finca Santa Teresa is as good as Panama gets (and considering that Panama is as good as specialty coffee gets, that's no small statement).

This Finca Santa Teresa Honey Process occupies a goldilocks space between the clarity of a washed coffee and the saturation a natural. It's delicate, nuanced, and worthy of a string section as it cools. The aroma smacks of gardenia, and the florals carry elegantly into the cup. Alongside them, you'll catch some rich baking spices and a hint of champagne acidity, but the finish is the piece de resistance. It's like licking an ice cream cone, silky, coating, and wonderfully sweet.
