Ethiopia’s Guji growing zone gets credit for this flavor bonanza. With soaring elevations, local landraces, and pitch-perfect soil, Guji is one of the country’s finest regions. And nestled within it is an even more polished gem: Hambela. Growers in Hambela tend to be small landholders. After harvesting, they deliver their fruit to local mills for processing.

The Sibu Mill handled processing for this lot. It was done in classic washed style—no anaerobic stage, no experimental inoculations, just old-school coffee know-how. First, cherries were sorted for ripeness, then fermented, pulped, and washed. If you’re looking for snazzy, experimental tones, this isn’t your bag. But if you go weak in the knees for crystalline washed vibes, you’re going to flip for it.

Nectarine, more nectarine, and yet more nectarine—those are the dominant notes here. Think the yellow variety, in all its sweet/tart glory. The tone carries a juicy quality, constant across the temperature range. Backing up the fruit-fest is a lovely floral note: dry, fragrant, jasmine-like. It dovetails beautifully with the nectarine. And finally, there’s limeade in this cup. It blooms as it cools, growing until it rivals the nectarine. The flavor triad amounts to a pitch-perfect washed Ethiopia profile.
