Chocolate, Nougat, Green Apple, Milky Body

Experimental processes are fun, but there's art in the balance and cleanliness of a great washed coffee. This coffee from Finca Jauja is just that: clean, balanced, downright artful. It's 100% Bourbon (a varietal prized for its sweetness), and it comes from one of the heavyweights of the coffee world, Guatemala. It also happens to rep one of the origin's most acclaimed growing areas, Antigua. The cup brews rounded tones, sweet and inviting, and matches them with a dash of blue-ribbon acidity. In other words, it's pretty much impossible not to love. 

The moment water touches the grinds, they atomize the room with milk chocolate. The stuff smells a bit like a melted Hershey's bar, and the aromatics translate seamlessly into the cup. But in true Antigua fashion, the brew isn't all chocolate. There's some nougat and a delicious hit of green apple acidity stitched into the sweetness. Pay attention, and you'll also note some sublime minerality—another Antigua hallmark—and the whole things rides on a wonderfully milky mouthfeel. Consider it the pinnacle of a daily drinker. You can brew it day in and day out and never tire—it's that good.
