Experimental processes are fun, but there's art in the balance and cleanliness of a great washed coffee. This coffee from Finca Jauja is just that: clean, balanced, downright artful. It's 100% Bourbon (a varietal prized for its sweetness), and it comes from one of the heavyweights of the coffee world, Guatemala. It also happens to rep one of the origin's most acclaimed growing areas, Antigua. The cup brews rounded tones, sweet and inviting, and matches them with a dash of blue-ribbon minerality. In other words, it's pretty much impossible not to love.
The moment water touches the grinds, they atomize the room with chocolate. The stuff isn't a Hershey's bar; it's one of those fancy-man chocolates you overpay for at Whole Foods. And in true Antigua fashion, the brew isn't all chocolate. There's a great hit of lemon curd stitched into the sweetness.
