Cherry Cola, Milk Chocolate, Toasted Almond, Candied Orange

Experimental processes are fun, but there's art in the balance and cleanliness of a great washed coffee. This one is just that: clean, balanced, downright artful. It hails from one of the coffee heavyweights of the world, Guatemala, and reps one of its most acclaimed growing areas, Antigua. The cup brews rounded tones, sweet and inviting, and matches them with a dash of blue-ribbon acidity. In other words, it's pretty much impossible not to love. 

Cherry Cola holds court in this coffee, sugar-sweet and rich as a fountain concoction. An elegant dose of phosphoric acid (the lively variety brightening ice-cold soda) acts as ballast, keeping the syrupy tones from becoming cloying. As the cup cools, milk chocolate rises, and the finish packs an elegant twist of toasted almond and candied orange. But the magic trick here isn't any one of the flavors in particular; it's the balance.
