This lovely comfort-toned yellow honey comes from the Santa Rita de Cássia Farm, a family-owned operation in Carmo de Minas. Most Brazilian lots are either processed via a dry or pulp natural method, but the folks at Santa Rita de Cássia reserve a small amount of their crop for a sugar-boosting yellow honey protocol.
Refined sweetness stands out. Honey pairs with malted grain to delicious effect. A bit of dried apple lends a restrained fruity note. Finally, milk chocolate makes for a rich base note, thickening mouthfeel and heaping more sweetness onto the brew. It's a great daily driver, and it's hard to imagine anyone not liking it. Brew it any which way you please!
