Salted Caramel, Anise, Cherry, Creamy

This coffee features a rarely seen cultivar: Arara. Arara is relatively new. It produces a vibrant yellow cherry, and its cups lean toward clean and rich—this one certainly fits that bill. Produced by Marta Ribeiro Rodrigues on her Minas Gerais farm, it's a sweet, creamy natural. It also happens to be a true microlot, representing a miniscule and exemplary slice of her farm's output.

The processing here amps traditional Brazilian vibes, but the end result is so much more than the sum of its parts. Picture a black and white cookie, the type you might have handed to you in wax paper wrapping at a NY deli. That even mix of chocolate and vanilla permeates this cup. There's also a sweet, savory edge that recalls a salted caramel waffle. Cherry emerges on the cool, sweet and lively. And in nod to the rarity, a delightfully restrained anise note rounds out the cup. It's sweet and creamy and smooth, a bang-up representation of one of the coffee world's more interesting yellow cultivars.
