Colombia El Mirador Bourbon Aji
My Friend's CoffeeLemon Custard, Panela, Candied Grapefruit
The pure Bourbon Aji lot comes from one of the more serious up-and-comers in Colombia. El Mirador sits in Southern Huila, an area known for dramatic climate shifts, soaring elevations, and exceptional coffee. The farm is run by Yessica Parra, and in recent years, it's become a specialty darling. This bag explains why.
Lemon custard, panela, candied grapefruit—they're written across the temperature range. And there's a syrupy resonance to the notes, which is unique. Most distinguishing, it features a sweet kick on the finish. It doesn't tether to one note in particular; it's more like a tonal reverberation, and it lingers for days.
Think of this one like a killer washed Pink Bourbon: clean, sweet, and lively. It's a great expression of the origin, and the Aji Bourbon varietal.
