Rose, Turkish Delights, Lemon

This is a rose co-ferment from Edinson Argote, one of the best producers in Colombia. His coffees will make more than one appearance on the MFC menu in 2026. The lot is pure Tabi, and was sourced directly from origin. It's largely unavailable in the United States.
 
It would feel like malpractice to offer a coffee by a producer this celebrated without spilling at least a little ink on him, so briefly: Edinson Argote is one of the heavyweights in the specialty world. A Huila farmer who treats agronomy like craft and processing like art. His coffees—every one of them—are a cut above. For this co-ferment, he introduced rose during fermentation, and the results speak for themselves.
 
Brewed as a pour-over, this coffee tastes like rose jam—the kind you might find in a Mediterranean market (or the Mediterranean itself, if you land on the finer side of fortune's wheel). It’s not just that the cup bursts with rose; it’s that it does so alongside dizzying sugars and just the right acidic flare.
 
Turkish Delight is another note here. Turkish Delights are rose-based candies: floral jelly squares infused with walnuts and dusted with confectioner’s sugar. The note builds on the rose jam core, layering in even more sweetness and a subtle nuttiness that adds depth rather than weight.
 
Finally, there’s lemon. And thank goodness, because without a pinch of acid, this cup might give you a toothache (a cutesy way of saying it would be too sweet). The lemon lands as a dash: pure, clean, bracing. You don’t notice it until you do. And once you do, you realize the cup has it all—florals, sweetness, nuttiness, and zing.
