Hailing from Honduras' Marcala region, this varietal assembled comes from local farms before being processed by the Aprocomsa organization, an outfit with a mission to produce extraordinary coffee with extraordinary impact. The Aprocomsa folks don't just carry out a fastidious washed protocol, they educate farmers in organic practices and devote proceeds to a cutting edge International school, which educates children in agronomy and beyond.
The dry fragrance in this one does a nice job telegraphing its flavors. Chocolate aromatics come through, a bit of baked goods. Add water and the aroma atomizes further, suggesting higher notes that come to the forefront in the cup. Red Apple makes a prominent appearance, sweet and just snappy enough to keep the brew lively. Biscotti comes next, replete with grainy sugars and a toasty edge. The dominant note, however, is a hit of dark chocolate, which fans across temperatures. Combined with the red apple and biscotti, it makes for a sweet, infinitely drinkable brew.
