Green Apple, Tomato, Herbaceous, Dark Chocolate

This headspinner from Papua New Guinea is a Mary Poppins bag of flavors. That shouldn't be a surprise, considering it comes from the Timuza Cooperative—a band of small farmers that's taken first place in PNG's national cupping competition. It's a stellar varietal mix, grown in volcanic soil, and processed via washing and sun drying. 

In the cup, a malic quality recalls green apple—a refreshing opener for the deeper notes to come. Tomato makes an appearance, and my is it beautiful: sweet, bracing, just a bit tart. The sharper notes give way to herbaceous undertones; think savory, leafy dried herbs. Finally, a dash of dark chocolate rounds out the brew. It's a complex, delicious cup from one of Papua New Guinea's finest outfits.
